Hot Cross Buns

As it's nearly Easter and we're not here on Easter Sunday I made some hot cross buns last night and left them rising in the fridge overnight so I could bake them for breakfast this morning (on request...).

Chocolate shortbread

To avoid doing work/because I had a group meeting I made some chocolate shortbread and dusted it with light brown soft sugar.  I might have dropped a piece and then it got cracked and then I felt bad for it so I might have accidentally eaten it because I didn't want it to feel bad...

Muffins

I have ambitions to make really good muffins and came across a simple muffin recipe online which I've been wanting to try for a while now.

Its just: 300g self raising flour
            150 g sugar
            1 medium egg
             175 ml milk
            125 ml vegetable oil
I mixed in a few handfuls of porridge oats, lots of raisins and sultanas and some chopped up plain chocolate as well as a pinch of salt and topped the batter with brown sugar before baking.



I'm irrationally pleased with them and sent Giles home with a box which he's meant to share and save for breakfast...

Fruit Cake

I made a simple Be-Ro fruit cake to take as part of a picnic to a point-to-point race and got a few pictures of it being cut - its just mixed fruit and raisins with a bit of cinnamon.

I got carried away about Easter and the end of term so I made (quite a few) little cakes with chocolate mascarpone icing and mini eggs on top!

Iced Dundee Cake

A friend asked me to make her Mummy a birthday cake and requested a 'fruit cake with white plasticity icing like Christmas cake has'..... I interpreted this into a large Dundee fruit cake, which has an amazing amount of fruit in it, my mixing bowl was full, covered with rolled regal icing.



I thought it would be nice to put a few decorations on top so I made some roses from red regal icing; its' the first time I've made them and I think I quite like decorating cakes now!

Panda Cake

I did my first decorated cake yesterday, I didn't think I'd be very good at it but I don't think its' too bad for a first attempt!!


Its a simple chocolate sponge layer cake with chocolate buttercream and rolled icing to top it.  Its a Panda just incase you can't tell....

Mothers Day

As it was Mother's Day yesterday I thought I'd made a little something for my mum and gran to have.  I got the idea for these little cakes from http://sweetapolita.com/blog/ and had a lot of fun (and made a lot of mess) making them.


I baked a square of chocolate sponge and 4 coffee cupcakes and then cut them into shapes before filling some with buttercream; orange for the squares and rose for the hearts, and coating them with chocolate buttercream before covering them in melted chocolate.  Plus theres some cake balls in there too.






Mum had already asked me to make a cake for her to give to Gran so I baked a coconut and orange sponge; its a fruitcake type sponge so its' fairly heavy but it smelt amazing.



I hate being on a no-carb diet...
